一、个人简历

徐莹,女,教授、工学博士、硕士生导师,主要研究方向为食品有害成分控制。2005年毕业于浙江大学并获博士学位;2018年度在美国田纳西大学访学。主持的课题有国家自然科学基金3项、山东省自然科学基金1项、国家科技计划支撑项目子课题1项、教育部新教师基金1项、青岛市科技支撑计划项目1项和横向课题7项;参与多项国家重点研发计划、国家自然科学基金等课题。以第一或者通讯作者在国内外重要学术期刊上发表论文60余篇,以第一发明人申请授权专利12项,其中已授权8项。

全国高校黄大年式教学团队主要成员,获得2019年山东省海洋与渔业科学技术奖一等奖;2019年自然资源部海洋科学技术二等奖;2016年获中国海洋大学第七届本科教学优秀奖(三等奖,首位),2017年中国海洋大学巾帼岗位明星等。

承担本科生和研究生课程有发酵食品及工程、发酵食品、食品化学、食品生物技术。主编《发酵食品学》、《食品化学》(3)和《食品质量与安全实验技术》(3)等教材。

近年来,主要在食品有害成分控制和食品活性成分递送体系构建方面做了相关的研究。主要研究内容如下:1研究胁迫培养提高酵母菌镉抗性和脱除能力的机理;2采用微生物法进行水产加工制品中重金属的脱除;3研究传统鱼露微生物群落结构并采用微生物法控制食品中的生物胺;4构建不同的食品活性成分递送体系。
